A limited release item, the Olio Nuovo, or “new oil” will be harvested and milled sometime in late October or early November. We will ship early December. We will only produce 120 bottles. So, get your order in soon.
This organic, first-pressed oil is a beautiful iridescent green. It is un-filtered, has a peppery kick and is bursting with fresh olive flavor. It is meant to be used right away as the fruit particles in the oil will begin to ferment after 2-3 months. The magic of this special oil will be gone by the end of winter so grab some now!
We recommend pairing it with fatty foods such as grilled meats, cheeses and of course you can never go wrong with crusty bread and a little salt!
